Tasting Notes
Rich cherry and beading pomegranate are garnished with a touch of orange zest on the nose. The initial red fruit notes are nicely balanced by freshly-tilled earth, mace, and crackling leaves. The wine opens in the mouth with cherry compote, dried earth, bracing baking spice, and orange pekoe tea. The tea-like tannins cleanse the tongue and extend the finish for minutes--if one can wait that long before taking another sip.
Vineyard and Winemaking Notes
Fermentation Method
Grapes were picked before sunrise, hand sorted and de-stemmed then cold soaked for five days before going through whole berry fermentation and receiving two punch downs per day. Fermentation took approximately 12 16 days in an open top five ton fermentation tank and the wine was then racked to barrels.
