Tasting Notes
A gorgeous crimson color. Deep aromas of hay, leather, and other barnyard scents leap out of the glass, followed by lush cranberry and dark cherry. Assam tea and mace incense the nose as the glass is raised to the mouth. The palate is filled with bright cranberry and dried herbs, swiftly followed by aromatic black tea and the rustle of tobacco leaves. Finally, the mouth is filled with clove, slate, and well-aged tobacco for a long and luxurious finish. Truly a stunning New-World lesson in Old-World sophistication. 

Fermentation Method
Grapes were picked before sunrise, hand sorted and de-stemmed then cold soaked for five days before going through whole berry fermentation and receiving two punch downs per day. Fermentation took approximately 12 16 days in an open top five ton fermentation tank and the wine was then racked to barrels.

Barrel Program
30% new French Oak, 30% one year old French Oak and 40% older. Wine remained in barrel for ten months with one racking at five months during
