Tasting Notes
Rich red raspberry and deep pomegranate give way to aromas of toasted mace, musk, and tobacco leaf. The signature alpine herbs of this vineyard have not come to the forefront yet, but are distinct on the tongue, as are the notable tannins and bright acidity that will allow for years of careful cellaring. The herbaceous opening is carried through the palate by crème de framboise and toasty allspice. The finish has a distinct, mineral finish filled with slate, sweet spice, and that whisper of alpine liqueur that so distinguishes this exceptional vineyard.

Fermentation
Grapes were picked before sunrise, hand-sorted and de-stemmed then cold-soaked for five days before going through whole berry fermentation and receiving two punch-downs per day. Fermentation took approximately 12-16 days in an open top five-ton fermentation tank and the wine was then racked to barrels.
Barrel Program
30% new French Oak, 30% one-year-old French Oak and 40% older. Wine remained in barrel for ten months with one racking at five months during blending.
