Hallberg Apple Orchard use to be our favorite place to stock up on freshly squeezed apple juice in the early 1990s. Brice Jones replaced the apples with an undulating vineyard off Highway 116 near downtown Sebastopol, calling it Hallberg Vineyard. This vineyard represents a full circle for us as we continue to purchase and enjoy the product of this extraordinary property into the next generation.

Dark ruby in color, this wine has aromatics of cherry and kirsch mixed with Christmas spices of cinnamon and cloves along with subtle smoky notes. A dark coiled fruit strength opens to flavors of bing cherry, yielding to hints of earthiness and a black pepper finish. The tanins are more granular, leading to a more masculine feel than our other Pinots. A gentle oak signature in the mid palate is integrated with the tannins and a pleasant minerality in a lingering finish.

Fermentation Method

These grapes were picked at night, hand-sorted and destemmed.  They cold soaked for 5 days before going through whole berry fermentation receiving 2 punch-downs per day.   Fermentation took 12 days in a open top 5 ton fermentation tank and the wine was then racked to barrels.

 

Barrel program 

30% new French Oak, 30% 1 yr., 40% older (Remond, Cadus, Magrenan, primarily). Wine remained in barrel for 10 months with one racking at 5 months during blending).
